Chef Nicholas Calias, a graduate of Newbury College and a Certified Executive Chef, brings nearly twenty years of culinary experience, passion, and plenty of creative and artistic talent to his role of Executive Chef at The Colonnade Hotel and Brasserie Jo where he is charged with continuing to develop and enhance the culinary offerings at the quintessential Back Bay hotel and restaurant.
Calias has spent the better part of a decade with Starwood Hotels and Resorts and Merritt Hospitality. He was an Executive Chef of the Westin Stamford Hotel and a member of the Corporate Task Force team, which facilitated property acquisitions to the company portfolio. He also held the position as General Manager for Eurest Compass Dining, the world's largest corporate dining organization, where he was responsible for the day to day operation of three units feeding over 4,000 people daily.
